Unicorn Cookies

These Unicorn cookies are magical!!

 

 

 

It seems there is Unicorn paraphernalia everywhere right now.  It's right next to the Cheetah Print everything!  You really can't miss either one.  But do you know about Nestle Toll House Unicorn Chips??  Evaire went through a bit of a "nunicorns" phase so when I saw these magical little morsels at the grocery store I knew immediately they would be a hit with her.  I was right!  She loves making food, and I love making food with her so we loved making these special cookies together with some magical unicorn ingredients! Besides, what's better than making memories together?  I can't think of anything....

 

This recipe has vanilla pudding in the mix, which to this two year old, was magical unicorn powder! The pudding keeps the cookies super moist and adds a nice vanilla flavor.  This recipe also calls for NO SALT which is super important here.  Trust me.  We may or may not have needed to double the recipe after I accidentally left the salt container on the counter and my precious two year old Granddaughter generously free style poured the salt onto the single batch of dough.  I managed to scrape off what I could but it was salty tasting so I made another batch of dough, then combined the two batches together to minimize the salt taste.  Not bad, but my advice is to just leave the salt in the cupboard in the first place!!  

 

 

 

 

 

 

Unicorn Cookies (Adapted from Chef In Training)

 

1. Preheat your oven to 350

 

2. In a mixing bowl cream together:

            2 Eggs

            3/4 C Butter

            3/4 C Brown Sugar

            1/4 C White Sugar

            1 tsp. Vanilla

 

3. Add in magical Unicorn Powder (Instant Vanilla Pudding mix, 3.4 oz box) combine well

 

4. Add in:

            2 1/4 C Flour

            1 tsp. baking soda

 

5.  Mix well

 

6.  Add in as many Unicorn morsels as you would like!  (Usually 1.5 c will do, but you be the judge)

 

7.  Roll dough into balls about 1" around and carefully place on prepared cookie sheet, or scoop out            with a spoon a dollup of dough and plop it onto the cookie sheet.  Either way works just fine.                  Don't let the precision of things ruin the fun of things!!!  This is all about fun and not perfection!!

  

      *TIP: If y'all can be patient, let the cookie dough sit in fridge for at least an hour, then form your            cookies with COLD dough.  This will make them a little crispy on the outside and chewy on the              inside*

 

8. Bake Cookies (artfully rolled, or joyfully plopped) for 8-12 minutes.  *This is a broad range of time        and everyone loves their cookies done differently so you be the judge when they're done.                        Personally, I like them a tad undercooked, then left on the pan for a few minutes to continue the          cooking process.  

 

9. Remove from pan, find the people you love the most, and eat those cookies together!!!
