I love all things cinnamon, especially this time of the year. The smell alone puts me right into the spirit of the holidays and gives me all the feels. The other night I had to take some cookies to a function so I got a little creative and came up with the following recipe for Oatmeal Raisin Cinnamon Chip Cookies! I know it's probably not the best practice to try a new recipe, especially one you make up, when you are serving it to others but these turned out SO GOOD!!!! They're a little crunchy on the outside and soft on the inside, just like a cookie should be.
Did I mention how YUMMY these are? Well, let me mention how yummy this combination of raisins and cinnamon chips are with this basic oatmeal cookie recipe. They are so yummy you are going to dream of these until you get in the kitchen and make them. Just imagining the smell of these gooey cinnamon morsels permeating your home is overwhelming your mind with thoughts of skipping dinner and going straight to dessert, right? Hurry and go make some! You will have hot homemade heaven in 30 minutes. Here's the recipe:
Oatmeal Raisin Cinnamon Chip Cookies
1 Cup shortening
2 Cup brown sugar
1 tsp vanilla
¼ Cup HOT water
1 tsp baking soda
1 tsp salt
2 Cup flour
2 Cup oatmeal
1 Cup cinnamon chips
1 Cup raisins
*optional- ½ tsp pumpkin pie spice
Cream shortening and sugar together for a couple of minutes. Mix in eggs and vanilla. Combine flour, salt, and *optional pumpkin pie spice in a separate bowl. Add baking soda to HOT water and stir to dissolve. Add soda water and salt/flour alternately to creamed mixture. Mix until smooth. Add raisins, oatmeal and cinnamon chips to cookie dough and mix until all ingredients are well incorporated. Drop by spoonful on to baking sheets and bake at 350 degrees for 10-12 minutes. Makes 2 ½ dozen cookies.
